Keto Pull Apart Bread with Garlic Butter Sauce

When you are on a Keto diet and salad becomes your best friend for the next few days.....you will definitely begin to miss the bread! I did too!! Found this recipe online and decided to try it out. Since I dont eat bacon I decided to follow the same recipe by omitting the bacon bits. The bread was very delicious and filling. I would make it again but would love to try something that is eggless since you eat so much eggs while on keto 😁


Ingredients:

  • 2 1/2 cups mozzarella, shredded
  • 2 oz cream cheese
  • eggs
  • 1 1/2 cups almond flour (super-fine)
  • 1 teaspoon baking powder
  • 1/2 cup grated Parmesan
  • 1 teaspoon Italian seasoning
The garlic butter sauce
  • 1/4 cup browned butter
  • garlic cloves, finely minced
  • 1/2 cup fresh parsley, chopped

DIRECTIONS
1. To make this garlic butter keto bread recipe – Grease a medium cast iron skillet with oil, butter or cooking spray and set aside. In a shallow plate, combine Parmesan and Italian seasoning.
2. Melt Mozzarella and cream cheese in a large bowl for one minute in the microwave. Mix well with a spatula until smooth.
3. Combine the melted cheese, eggs, baking powder and almond flour. Mix until smooth. 
4. Using a large cookie scoop, scoop dough and bread roll into the Parmesan and Italian seasoning mix. Place each bread roll into the prepared cast iron skillet. Sprinkle bread roll with more Parmesan cheese. Place skillet in the refrigerator for 10 minutes. In the meantime, preheat your oven to 400ºF (200ºC).  
5. Remove the cast iron skillet from the refrigerator. Bake the garlic butter bread for 20 to 25 minutes, until golden brown.
6. Brush generously the baked garlic butter keto bread with the garlic butter sauce and serve. Enjoy!

Mung Bean Sprouts Idli

   Idli is nothing but the batter post steam bath! Idli is one such South Indian breakfast that is prepared by fermenting ground rice and urad dal batter. This batter is steamed and served with an assortment of chutneys and sambhar. "Stressed is Desserts spelled backwards!"   Keto is tough I say! While on keto many a times you might be craving sugar. When you begin craving for sugar while on keto, try increasing your protein intake. Using the low carb sugar options also works good on smoothies or baked keto goodies.
