Egg White Omelet with Stir fry veggies!

"You can't make an Omelet without breaking Eggs!" By the time you come to the fourth week of your keto diet most of us are tired of eating eggs. Imagine, how hard it would be for a vegetarian to be on a keto diet. In my case, I was getting bored of eating boiled eggs or egg curry. I was bored of eating the egg yolk! Today, I decided I am not going to use the yolk and make myself a plain old egg white omelet. You can add some finely chopped green chillies while making your omelet or just layering some cheese before folding your omelet. I wanted to add some color to it and so followed a vegetable stir fry on my plate. A simple stir fry of green peppers, asparagus, onion and cauliflower with a dash of salt and pepper. This was a refreshing breakfast to start my day!

Keto Flaxseed Tortilla

Everybody loves something, even if it's only  tortillas . While on a keto diet, we often come across a stage where we start missing the rotis/tortillas. I came across this stage too and saw many posts with recipes using coconut or almond flour, which I tried and was good. This below recipe used flaxseed powder which is full of nutrients and is very low in carbs. It is a must try! Ingredients 1   cup   flaxseed powder 2/3   cup   hot water 1/2   tsp   salt Instructions Add water into a medium-size saucepan and bring it to a boil.  Add the salt and flaxseed powder. Turn the heat off and stir immediately with a wooden spoon, until the flaxseed powder absorbs all the water, As you stir, the flaxseed powder will form a dough and gradually not stick from the saucepan. Keto Cheesecake

"Stressed is Desserts spelled backwards!"   Keto is tough I say! While on keto many a times you might be craving sugar. When you begin craving for sugar while on keto, try increasing your protein intake. Using the low carb sugar options also works good on smoothies or baked keto goodies. One such day while I was craving for dessert, I made the keto cheesecake. It was spoonful of heaven! Bliss! Hope you like the recipe and would love to hear back your comments. KETO CHEESECAKE Ingredients: 1 tsp Unsalted butter 4 oz Cream cheese 2 tbsp Lakanto Monk fruit sugar 5 Raspberries Method: Melt the butter in a small microwaveable ramekin. Keto Pav Bhaji

"It's not cheating on Keto......when the bread doesn't know it's you!" Bread is something I guess most people on Keto begin to miss eventually. I did too and tried some variations of keto bread recipes available online. Most of the bread recipes had cheese and egg which I was not liking at all. On keto, we anyways eat a lot of egg and cheese and I wanted to avoid it. Yesterday, I made Pav bhaji for my family as they are all home due to the COVID 19 outburst. While I made the bhaji the authentic way for my family, I did not want to make a whole new meal for myself. Keto Thandai Ladoo!

"God created your life. And you are in charge to COLOR it, make it BEAUTIFUL!" Today is Holi and I have some fond memories of this festival when I was a kid. Northern India always celebrates this festival of colors in full spirit. Friends and families meeting and greeting one another, applying color and wishing for good health and prosperity, some amazing food to eat and not to forget the Holi special drink....'Thandai'. It is a very refreshing and cooling drink and a dollop of vanilla ice cream would top it all! Me being on my Keto diet....I was definitely craving for Thandai....and my prayers were answered. I stumbled upon the post from Sophie who had made Keto Thandai Ladoo. This post made my day and I tried it myself. Keto Halwa!

"Aagaya aagaya Keto Halwa aagaya"  🎢 🎡 For all those with a sweet tooth and are on a keto diet  πŸ‘‡  this halwa is amazing! Serves 5 Ingredients: Ghee/clarified butter 1/4 cup Almond flour 1/2 cup Coconut flour 1/2 cup Hot boiling water 3/4 cup Cardamom powder 1/2 tsp Stevia sweetener 1/3 cup Almond slivers for decoration Method: Put water to boil on a separate burner. In a nonstick vessel add ghee. Add the almond flour and saute for a minute. Then add the coconut  powder, saute until you get the aroma of roasted flour and it turns golden brown. Now add boiling hot water to it. Stir it continuously. It will slowly turn into a thick paste, and ghee to it and stir until the ghee separates. Add the cardamom powder and sweetener and mix it thoroughly. Cook for an additional minute. Week 3 on Keto!

"Weight-loss is not a physical challenge. Its a mental one!" Hell yeah! It is definitely a mental strain when one follows any diet for that matter. By the time you come to the third week, you would be visibly seeing a lot of difference in yourself.....your weighing machine must be showing some awesome numbers, which you would have not seen for ages. Don't be under the impression that you need to stop your diet right here.......what you have lost is the water weight. The tough part is going forward from here. In the coming weeks, you will be losing about 1 -2 lbs a week if you are following the diet diligently and not cheating.
