Keto Pull Apart Bread with Garlic Butter Sauce

Broccoli might get stuck in your teeth, but French fries will get stuck in your ass!!! 🤣🤣 I have always loved eating broccoli but have seen many people running away from it. Ever since I have been on my Keto diet, broccoli has become my new BFF! It is one vegetable that is rich in fiber, potassium, vitamin C, vitamin K and Iron. Mung Bean Sprouts Idli

   Idli is nothing but the batter post steam bath! Idli is one such South Indian breakfast that is prepared by fermenting ground rice and urad dal batter. This batter is steamed and served with an assortment of chutneys and sambhar. While on a keto diet, I realized that I was craving for Idlies and searched the internet to find no such recipe that was keto friendly. I did stumble upon few recipes which had either paneer or used baking soda to make the idlies. My friend Geetha made Idlies using Mung bean sprouts and that made me try making them out myself. This is a wonderful Keto Idli recipe as each Idli is only 1.8g net carbs. The recipe below yields 10 Idlies. Keto Zoodle (Zucchini Noodle Pasta)

KETO-PATIENCE: Remaining calm when justifying the spoon of butter to someone WHO EATS cereal for breakfast, bread for lunch and pasta for dinner! Zoodles with 3 cheese marinara sauce and grilled veggies (mushrooms, peppers and onions) ....it was one Keto Bowl of Heaven! Ingredients: 1 zucchini 1/4 cup Bertolli marinara sauce 1 cup sliced mushroom 1/2 cup sliced red peppers 1/2 cup sliced onions  salt to taste 1/4 cup shredded mozzarella cheese 1 tbsp grated Parmesan cheese 1 tbsp light olive oil Method: Cut the zucchini into thin slices or use a spiralizer. add some salt on the zucchini and let it rest for 10 minutes. It will start leaving water. Meanwhile, heat a pan and add 1/2 tsp oil, saute the zucchini and set aside. In the same pan heat the remaining oil and saute the onions, peppers and mushrooms. WEEK 2 ON KETO!

"There may be tough times, but the difficulties which you face will make you more DETERMINED" Keto is definitely not as easy as you think. Hearing from many people around you saying they have lost 30lbs/50lbs would have made you think you could do it too. As it is said..."nothing comes free"....weight loss also does not come free...you need to work hard for it too! Second week on any diet for that fact will be the toughest....the basic thought that would come into your mind is...."I have been depriving myself from the food I love and haven't lost much weight". Having to cook regular meals for the rest of your family and a totally opposite meal for yourself is very tiring. Hats off to all the moms out there who are sailing on the same boat as I am 🙋. This is what I do...... Make rest of the family meal plans on Saturday morning along with planning mine on Carb Manager App, note down the grocery list and go do shopping on Saturday eve or Sunda...

Week 1 on Keto!

A huge part of losing weight is believing you can do it realizing its not going to happen overnight! As I had mentioned in my introduction post, I have been 'living to eat, instead of eating to live'.  It was becoming very difficult for me to look at myself in the mirror. I was getting depressed with what I saw and also of what others felt about me.  My husband never ever said anything ,m y kids had started calling me 'fat' in a not so hurting way but when your mom feels the same....it hurts!!  Sometimes I would start thinking how I have managed to destroy my body by not taking care of it for so long. I recall of how thin I was when I was single and now after two kids......I am that same person maybe wearing 50 thick layers of clothing on me! This year when I turn 40, I wanted to do something for myself.....and thus began my keto journey on 27th January, 2020! Hello and welcome!

Hello and welcome! I had always been active and thin during my childhood, graduation and post graduation days. Things suddenly took a twist post my appendicitis surgery in 2004. Little did I know that I would gain 10 kilos/22 pounds within a year! That was the year when I got married and moved to live in the US of A. Totally new to this side of the world where fast food and junk food had become a part of my life. In these 15 years I had some joyous moments and then the not so joyous moments. I had my 2 kids, one in 2006 and one in 2011. Sometimes we fail to realize what we are doing to our body that is not visible to us. I had my miscarriage in 2010 and when I had finally conceived, I fought the gestational diabetes battle. I tried to be fit and stick to a strict diet regime while focusing on the growth of my unborn child. Those 10 months were tough upon me but I managed to have a normal delivery. Things don't always come easy, gave birth to my lovely child but had to fight...

Keto Stir Fry - Mushrooms, Yellow Peppers and Spinach

Being on a Keto diet is very tough if you are a vegetarian. Some days I felt that it was tough for me to fix a meal for myself. I wasn't going to give up so easily and I started playing around with some veggies that were keto recommended and added seasoning to my liking and taste. That's how my keto stir fry came into existence! Ingredients: 1 tsp butter 1 cup mushrooms 2 cups spinach 1 yellow bell pepper 3-4 garlic cloves 1 tbsp balsamic vinegar 1 tbsp grated Parmesan cheese  Method: In a pan add butter followed by mushrooms, peppers and garlic.  Saute them well until the mushrooms begin to brown. (I like to stir fry until the water from the mushroom is gone) Add balsamic vinegar and cook till it is well coated. Add in the spinach and cook until it is wilted. Remove and serve topped with some grated parmesan cheese.
