Week 1 on Keto!

A huge part of losing weight is believing you can do it realizing its not going to happen overnight!

As I had mentioned in my introduction post, I have been 'living to eat, instead of eating to live'.  It was becoming very difficult for me to look at myself in the mirror. I was getting depressed with what I saw and also of what others felt about me. My husband never ever said anything ,my kids had started calling me 'fat' in a not so hurting way but when your mom feels the same....it hurts!!  Sometimes I would start thinking how I have managed to destroy my body by not taking care of it for so long. I recall of how thin I was when I was single and now after two kids......I am that same person maybe wearing 50 thick layers of clothing on me! This year when I turn 40, I wanted to do something for myself.....and thus began my keto journey on 27th January, 2020!

I know this journey is going to be very tough but I am determined to bring a change in me. My blog postings will talk about what I am eating everyday and the hurdles I faced and my new discoveries.

To begin with, I am a vegetarian but eat eggs occasionally. Keto diet is considered to be working well with meat eaters as they have many options when it comes to low carb -high fat food. I knew it was going to be very tough on me....but then what's the fun if you haven't tried it! I decided to do a lot of search on Keto dishes with vegetables and eggs.

To begin with you need to download a nutrition calculator app like myfitnesspal or carb manager. I initially had myfitnesspal but unless you are a premier member you will not be able to see the macros. Carb manager helps calculating the macros and giving you the net carbs calculation as well. I downloaded this app only in week 3 where you will be able to see me daily carb intake.

Some important notes from the meal plan from day 1 - I was not feeling hungry but experiencing some tummy pain and urge to use the restroom. Day 2 - After lunch I was still having tummy pain and had what is called 'Keto diarrhea', so I decided to have homemade yogurt and include broccoli as it has fiber. I planned to stay away cheese and almond flour to help me with the tummy issues.

Steamed Broccoli with Cheddar Cheese Sauce

Broccoli might get stuck in your teeth, but French fries will get stuck in your ass!!! 🤣🤣 I have always loved eating broccoli but have seen many people running away from it. Ever since I have been on my Keto diet, broccoli has become my new BFF! It is one vegetable that is rich in fiber, potassium, vitamin C, vitamin K and Iron. It also has a good amount of protein compared to other vegetables.  I have liked making broccoli using my air fryer but I realized that it was not keeping me full for long. While searching the web I stumbled upon the cheddar cheese sauce and decided to try it myself. One serving of broccoli with cheese sauce is a good snack that keeps you going for a long time. Ingredients: (Serves 3) 3 cups broccoli Florets steamed 1/4 cup shredded cheddar cheese 1/4 cup heavy cream 4-5 garlic cloves finely chopped salt and pepper to taste Method: In a pan add heavy cream and cook over low heat. Once it begins to boil, add gar...

Mung Bean Sprouts Idli

Idli is nothing but the batter post steam bath! Idli is one such South Indian breakfast that is prepared by fermenting ground rice and urad dal batter. This batter is steamed and served with an assortment of chutneys and sambhar. While on a keto diet, I realized that I was craving for Idlies and searched the internet to find no such recipe that was keto friendly. I did stumble upon few recipes which had either paneer or used baking soda to make the idlies. My friend Geetha made Idlies using Mung bean sprouts and that made me try making them out myself. This is a wonderful Keto Idli recipe as each Idli is only 1.8g net carbs. The recipe below yields 10 Idlies. Ingredients: 3 cups sprouted mung beans 1/4 inch ginger 1 small green chilly salt to taste water enough to grind Method: 30 mins before preparing the batter soak the mung bean sprouts in water. This will make sure the mung bean is clean. In a mixer jar add - drained mung bean sprouts, ginger, gr...

Keto Cheesecake

"Stressed is Desserts spelled backwards!"   Keto is tough I say! While on keto many a times you might be craving sugar. When you begin craving for sugar while on keto, try increasing your protein intake. Using the low carb sugar options also works good on smoothies or baked keto goodies. One such day while I was craving for dessert, I made the keto cheesecake. It was spoonful of heaven! Bliss! Hope you like the recipe and would love to hear back your comments. KETO CHEESECAKE Ingredients: 1 tsp Unsalted butter 4 oz Cream cheese 2 tbsp Lakanto Monk fruit sugar 5 Raspberries Method: Melt the butter in a small microwaveable ramekin. Tilt the ramekin to coat the sides. Crush the graham crackers into fine crumbs, then add to the ramekin with the butter and mix well. With a spoon, press the crust evenly against the bottom of the dish. In a small bowl, combine the cream cheese, sugar, and vanilla, stirring until there are no lumps. Spread the filling on top of t...
