Hello and welcome!

Hello and welcome!

I had always been active and thin during my childhood, graduation and post graduation days. Things suddenly took a twist post my appendicitis surgery in 2004. Little did I know that I would gain 10 kilos/22 pounds within a year! That was the year when I got married and moved to live in the US of A. Totally new to this side of the world where fast food and junk food had become a part of my life. In these 15 years I had some joyous moments and then the not so joyous moments. I had my 2 kids, one in 2006 and one in 2011. Sometimes we fail to realize what we are doing to our body that is not visible to us. I had my miscarriage in 2010 and when I had finally conceived, I fought the gestational diabetes battle. I tried to be fit and stick to a strict diet regime while focusing on the growth of my unborn child. Those 10 months were tough upon me but I managed to have a normal delivery. Things don't always come easy, gave birth to my lovely child but had to fight some complications after....
Developed some blood clotting issue soon after the delivery and had to undergo two D&Cs within the span of 2 hours. Frozen platelets were administered but I had to be the 'one in a million' to develop allergic reaction to it. I thank all my lucky stars that day when the nurse ended up administering a very low amount and we caught the reaction on me sooner, else I would not be here today sharing my story!

I had to fight IBS for 8 long years, pre-diabetes for 2 years and also severe hip pain that would restrict me from sitting or sleeping on the floor for more than 5 minutes. As the year 2020 swept in, it made me realize that I need to bring some change in myself, start loving myself and not turn 40 with my weight and health complication's baggage!

To be honest, I have tried all possible diets and gyms in this planet :) with not much change. A colleague of mine introduced me to Keto and I thought to myself...."one more, lets try". This time I decided to not just give it a try but to research, invest time and see the change. I wanted to be happy and healthy when I turn 40!

This blog is going to be mainly about my Keto journey with the diet I followed and all that I learnt in this process! Cheers to MyKeto40life!

Steamed Broccoli with Cheddar Cheese Sauce

Broccoli might get stuck in your teeth, but French fries will get stuck in your ass!!! 🤣🤣 I have always loved eating broccoli but have seen many people running away from it. Ever since I have been on my Keto diet, broccoli has become my new BFF! It is one vegetable that is rich in fiber, potassium, vitamin C, vitamin K and Iron. It also has a good amount of protein compared to other vegetables.  I have liked making broccoli using my air fryer but I realized that it was not keeping me full for long. While searching the web I stumbled upon the cheddar cheese sauce and decided to try it myself. One serving of broccoli with cheese sauce is a good snack that keeps you going for a long time. Ingredients: (Serves 3) 3 cups broccoli Florets steamed 1/4 cup shredded cheddar cheese 1/4 cup heavy cream 4-5 garlic cloves finely chopped salt and pepper to taste Method: In a pan add heavy cream and cook over low heat. Once it begins to boil, add gar...

Mung Bean Sprouts Idli

Idli is nothing but the batter post steam bath! Idli is one such South Indian breakfast that is prepared by fermenting ground rice and urad dal batter. This batter is steamed and served with an assortment of chutneys and sambhar. While on a keto diet, I realized that I was craving for Idlies and searched the internet to find no such recipe that was keto friendly. I did stumble upon few recipes which had either paneer or used baking soda to make the idlies. My friend Geetha made Idlies using Mung bean sprouts and that made me try making them out myself. This is a wonderful Keto Idli recipe as each Idli is only 1.8g net carbs. The recipe below yields 10 Idlies. Ingredients: 3 cups sprouted mung beans 1/4 inch ginger 1 small green chilly salt to taste water enough to grind Method: 30 mins before preparing the batter soak the mung bean sprouts in water. This will make sure the mung bean is clean. In a mixer jar add - drained mung bean sprouts, ginger, gr...

Keto Cheesecake

"Stressed is Desserts spelled backwards!"   Keto is tough I say! While on keto many a times you might be craving sugar. When you begin craving for sugar while on keto, try increasing your protein intake. Using the low carb sugar options also works good on smoothies or baked keto goodies. One such day while I was craving for dessert, I made the keto cheesecake. It was spoonful of heaven! Bliss! Hope you like the recipe and would love to hear back your comments. KETO CHEESECAKE Ingredients: 1 tsp Unsalted butter 4 oz Cream cheese 2 tbsp Lakanto Monk fruit sugar 5 Raspberries Method: Melt the butter in a small microwaveable ramekin. Tilt the ramekin to coat the sides. Crush the graham crackers into fine crumbs, then add to the ramekin with the butter and mix well. With a spoon, press the crust evenly against the bottom of the dish. In a small bowl, combine the cream cheese, sugar, and vanilla, stirring until there are no lumps. Spread the filling on top of t...
